What makes it a real poutine
Three things, and we do not cut corners on any of them. Fries cut in our own kitchen, not out of a bag. Cheese curds rather than shredded mozzarella, because curds are what give poutine its squeak and the way it pulls apart. And gravy made in house, served hot enough to soften the curds without flattening them.
That is how it is done in Montréal, which is where the rest of our menu comes from too: Montréal smoked meat sandwiches, donairs, and pudding chômeur, our homemade maple cake, for dessert.
Where to eat poutine in Banff
We are at 501 Banff Avenue, on the ground floor of the Banff Inn, a short way up Banff Avenue from the middle of town. It is a lounge and sports bar as well as a pizzeria, so you can watch the game over a poutine and a beer without fighting for a table downtown. There is no loud music and no live band, so it stays quiet enough to talk, and small children are welcome.

Do you use real cheese curds?
Yes. We use cheese curds, not shredded cheese. That is the difference between poutine and fries with cheese on them.
How much is poutine at Carlito’s?
A classic poutine is $13. Our loaded poutines, including the Italian, 3 Cheese, Galvaude, smoked meat and meat lovers, are $15. Large is $3.95 more.
Is there a vegetarian poutine?
Our Veggie Poutine is topped with fried onion, green pepper and mushroom, but it is served with our regular gravy, so it is not vegetarian. Tell us about any dietary requirements when you order and we will let you know what we can do.
Can I get poutine delivered in Banff?
Yes. We deliver free anywhere in the town of Banff, every day from 5:00 pm to 11:00 pm, with no delivery fee and no minimum order. Hotel guests, give us your hotel name and room number when you order.
How late can I get poutine in Banff?
Our kitchen serves until 11:00 pm, seven days a week, all year round. We open at 5:00 pm for dinner.
